I love zucchini strips panfried in butter with paprika and turmeric, and served as a side to salmon.

Zukes are very easy. Slice about 5ml thick and pan fry with plenty of olive oil, then add salt, black pepper and lemon juice.

You can salt them first to dehydrate the surface so they brown while retaining internal moisture.

If you have time or don’t mind a bit of work
Cut them length wise, egg and bread crumb them. You need dried breadcrumbs (fresh makes them soggy, not Panko crumbs either).
Fry them for a minute or so each side. Get the oil hot, once you start turn down to medium heat. Drain on some paper towel. Delicious hot or cold, on their own or with some sauce/relish.
If you have heaps you can make a Parmigianna.
