Yeah but is it like putting together 3 transparencies? Do you use the whole layer? What would be a requirement?

Back in film/development days, nifty things were done with film. Nowadays - it’s programs like Photoshop.
With Photoshop , you can use digital ‘layers’ - they are just as you think they would be.
A ‘requirement’ would be, for example - adding an absent person to a group photo for completeness.

Ok I get the layers bit. I’ve done that myself… I was thinking more it had to do with say taking 3 / 100 photos of the same thing. Different focal lengths, iso, shutter speed etc and then layering them together to make a ‘better’ photo. My question was too generic and maybe composite isn’t the right word then.

I think ‘composite’ is correct.
You would ‘layer’ photos for lots of reasons, and you have identified a few yourself.
Yes, you could do it for focus reasons, and that would be because for some reason, you had to compromise your settings.
‘HDR’ (high-dynamic range) treated photos with that (to me, god-awful) cartoony look are an example of staggered ISO-setting layers.
The artistic possibilities are kinda endless, tbh. But most composites I see are due to someone not knowing how to use their cameras properly.

I think the latest top end canon was using a new raw where it saved like 40 different layers to be processed later. I’ve never really done much with the raw files even though I shoot jpg+raw.
