Since our sense of smell is so poor that is the one that I would pick. It would have an affect on the sense of taste, however, as they work very closely together when eating food. But seeing as I live on a farm, and have three smelly dogs, losing my sense of smell may be a blessing in disguise.
But we have more than 5 senses. So of all the senses probably temperature

There’s also the alleged sense of someone looking at you. I could live without that, but I do wonder if it would make me walk straight in front of a very fast car.
There’s the standard 5, plus balance, temp & pain.
Some people (very very few) have no sense of pain. Their parents pretty much have to wrap them up in cotton wool and stop them from doing anything at all. That would suck.
Voted for taste. The vast majority of what we perceive as taste is in fact what we smell…

That’s pain. Sensors in your spinal cord tell you to move before you burn. Temperature is more about ambient temperature.
