Pardon my ignorance, but what is it exactly? Pork I guess, but what cut?

I wanted to make a prosciutto entree for xmas, anyone got any ideas? I was thinking maybe a prawn wrapped prosciutto something?

Yeah I usually go there for fish, donuts (they’re magic) and some Lebanese pastries. The couple of times I’ve used a butcher there I wanted some American cuts to bbq, but they were trying to sell me something else. Don’t have a butcher I can trust there yet.

Love this with a bit of fresh mozzarella and some char grilled bread. Tonne of olive oil.

Any tips would be great.

For what it’s worth, I use the two fish places. The green circle one is decked out in green and gold, this is my preferred one. The blue circle one has more on offer, but I prefer the other one.

Really light simple and tasty, prosciutto rocket, pear and blue cheese salad. Lightly fry the prosciutto, mix the rest together and drizzle with your favourite dressing, I like blood orange but anything zesty with a touch of sweetness would be fine

Cherry tomato on a slice of fresh mozzarella, basil leaf on top. Wrap it all with a strip of prosciutto, toothpick through. Make lots, they evaporate when offered.

W197 is my guy. if you can get the guy who runs the place he is always happy to offer advice.
A bit more expensive than a couple of the other places but the steaks are the best in the market and like all the places…if you go in the last 30 mins or so they are knocking down the prices.

I’ll check out your green and gold fish place…I think I have bought something there before but not my regular

Yeah, W197 looks legit. His wares look the most natural, compared to the others. Dark red meat, no fancy lighting. Got some good dry aged funk ther too

The problem I have with things like that is that there are so many delicious things to eat that I am then not properly hungry for the main event!
