I agree. This one turned out well though as I took it to my cousin’s house nibbles and drinks and we only had this and a few other things so we made our way though half of it at least!

What didn’t they like about that??? And what would you tweak? Looks pretty damn good to me.
Kids weren’t a fan of the mushroom gravalax, and maybe a little pink for them.
I used an eye fillet, it was perfect, but I’d like a bigger fillet next time. Adds a bit more drama I think.
Probably would try the block puff pastry (don’t even know if that’s a thing in Oz) because the sheets were a little thin.
One of the tips from Jamie Oliver was to cook the base of the Wellington in the pan you’re cooking in. Put it over your hot plate, so the base doesn’t go soggy. It didn’t take long, but seemed to work.
It was delicious though. So only fine tuning. I’ve had wrapped in bacon before, but prosciutto was waaay better.
You’ve cooked it perfectly. The dreaded soggy bottom is difficult to overcome but it’s certainly possible. Have you wrapped the whole thing in a crepe before the pastry? Kinda hard to tell from the photos.
A fail safe is to cook on a cooling tray with baking paper over the top and poke tiny holes in the paper.

Great hint about cooking on the rack. I’ve never tried to cook it but I’m going to have a go. Maybe not until cooler weather comes though. It’s not exactly a summer meal.
