When you shop for cauliflower and broccoli, they usually sit side by side. Theyāre almost identical foods.
Why does one come with just the stalk, and the other comes with all the farking leaves wrapped around it that you just throw in the bin?

I actually prefer to eat the Broccoli stalk than the flower! Also good in a salad peeled or finely chopped.
But to answer your question re Cauliā¦I learnt many years ago working on farms in the the UK the leaves are left on for 2 reasons:
They protect against mould growth and people eat the leaves which are apparently delicious!

Well, you can. But they grow differently. The broccoli leaves are not as tightly wrapped around the head/flower/bud/floret as cauliflower.

Because broccoli heads donāt end up with close-wrapping leaves on them.
The inner leaves on a cauliflower are great in stir fry - or any way you cook a leafy green.

As to vegans, there is an ethical issue in regard to ingredients that are by products of crops produced for feeding animals produced for human consumption ( as for some corn crops produced primarily for animal consumption, some of the crop is used to produce oil for the manufacture of edible products for humans).
