The hottest most ridiculous sauce I have tasted was the Trinadad Scorpion. I love chilli, but I have a long way to go. Drink milk if you go too far one day. I am told the casein protein in the milk neutralises the heat in the Chilli very well. Water does very little and don’t drink coke. (pepper spray, didn’t know it was used in cooking)

Worth a look though, if nothing else, for the huge variety of chilli seedlings that Renaissance Herbs sell. some really obscure and hard to find plants there too, especially if you don’t grow your own plants from seed. I got an aji amarillo plant there a few years back, incredibly tasty.

I got a couple of bottles from Awesome Al at the Vic Market. Not bogglingly hot (I avoid them, I have enough) but tasty.
In my fridge i have Scorpion Strike, Atomic Death, 357 Magnum, Megadeath, Ultradeath chilli sauces, plus Tabasco Habenero sauce. The best for heat and flavour are the Scorpion Strike and Atomic Death. The 357 magnum is the hottest of the bunch but the flavour is a little disappointing. Scorpion strike can be bought from the Chilli Factory, Atomic Death from the Vic Market, Tabasco from anywhere. The others were bought from the Port Adelaide Market. Sometimes i will mix them all together and use on steak or just about anything else. The wife steers clear of me when i cook with this lot. There was a place in Handorf that used to sell chilli dark chocolate, chilli sauce and chilli jam, they all had a great kick. But the shop is no longer there. I bought chilli vodka from Kangaroo Island, but that was a bad choice, just tasted of ethanol.

I plunged into a huge chasm of depression and self doubt when the Hot Chicks thread vanished. It may have lasted for a least 20 or 30 minutes. maybe longer. I couldnt tell. I didnt know what to do apart from renew my membership for 2015.

Byron Steve’s “Toughie Hot Pants” sauce is one of the tastiest hot sauces around. Pick it up from the farmers markets up around Byron (obviously!). Made with the good ol’ hot Ghost chillies. Look him up on Facespace “Byron Steve’s Delectable Preserves and Chilli Sauces”.
Best Chilli shop I have been into was down in Key West, Florida - Peppers of Key West. A massive place filled with chilli everything and you can do a tasting of whatever floats your boat. Fantastic stuff and they also do postal deliveries to Australia. I think we walked out with about $300 worth of chilli goodness to take back to Aus.
I have heap of Jalapeno plants going this year and we will be making our own chipotle powder with them. Great on everything. Not really HOT, but still a lovely flavour to shake on the eggs in the morning.
In the past we have had over 32 different chilli plants going in the veggie patch, used the extra hot ones in a fantastic Jamaican J-erk baked ham, the heat drops slightly and you get the fantastic fruitiness of the chillies coming through. Love to stuff the long ones and fry them up in the fry pan or make Atomic Buffalo T-urds with the Jalapenos.
When I was in the Army I always had a little bottle of hot sauce in the webbing to add some flavour to the ration packs.
Here in Japan I just tasted this amazing stuff called Sansho Pepper. It has this amazing hot, spicy flavour and intense lemon after taste that made your tongue tingle for ages! Bought some of the stuff ground and hope that I have no probs getting it in through customs. Will be fantastic on BBQ fish or pork, I reckon.
