It’s not. It gets butchered because it is simple.
People try to overcomplicate it and they fail miserably.
It is regional, seasonal and based on quality ingredients.

It’s just boring. Flavours are boring, samey, each dish is just the same taste in a different dish. I dunno, never been particularly enamoured with it. Never had an Italian dish and thought “■■■■ that’s amazing”.
Had that with Viet food though, a few times. I think Viet food blows almost everything out of the water.
Even the most simple Viet dishes are so much more interesting and stimulating to the taste buds than most European food.
As someone of Indian heritage ( South Indian), I am partial to my indigenous cuisine, as I feel it is; diverse, flavourful, and combines methods and ingredients in such a way that is so delcious. However, Italian cuisine can take 2-3 ingredients and turn them into something incredibly special. Make an aglio e olio; it takes only 20 mins start to finish, and it is just so damn satisfying.
Viet is also one of my favourites. Fresh, fragrant, regional and hearty.
3rd: Chinese
2nd: Italian
1st: Japanese - I’m bias as I used to live there but:
- Sushi/Sashimi
- RAMEN
- Soba
- Udon
- Yakitori
- Okonomyaki
- Katsu
- Tempura
- Wagyu
And putting aside the variety, it is tha unwavering consistency in quality, no matter where you go, that elevates it. Nothing compares.
I do enjoy the southern indian style dishes than the northern ones.
I’m an official brand ambassador for South Indian Food…people need to know Indian food isnt simply; butter chicken, naan, rogan josh and tandoori.
They get spicier as you head north right?
Possibly Thai.
Japanese right up there, for range and mastery (restaurants/chefs dedicated to single dishes).
Also love me some Spanish cuisine, of the European options. Italian is way down my list.
Had dinner at an Afghan restaurant once. Suprised me how nice it was
Italian…best dish I’ve ever eaten was a fresh made Spaghetti Matriciana in Brindisi.
Followed closely by a lasagne (lunch) and pizza (dinner) on the same day one time in Venice.
Escargot is also delicious.
Middle east BBQ places are superb.

Firstly, 11/10 thread topic.
Secondly, tie between Indian and Vietnamese for me.
I had an Okra curry at an Indian mates wedding and it’s the best thing I’ve ever eaten, with elephant ear fish along the Meekong a close second.

They’re all great and this thread is making me very hungry
