What type are they ?

I have. Took me three tries to get it just right, but it’s worth it. The hardest part is judging when to take it out of the oven. So, so easy to do it just that bit too long, and it turns out overdone.

Get an oven safe meat thermometer and leave it in the beef while it cooks.

I’ve tried thermometers. It’s probably me, but I just can’t use them effectively – neither the instant kind nor the leave in kind.
