Yes, I have read that any meat should be bought to room temp for about 20 mins before cooking - not totally sure why though

Makes little difference.......the resting time after is far more important.

Probably more important is a meat thermometer. Since getting one have yet to fark up the protein part of meals.
Why are calculator and phone keypads not the same?
Calculators were laid out way before phone keypads. Phone keypads were done in the 1960s when the touch tone was invented. A phone company in the states ran tests on what layout people found easier to use, and found that the current layout worked best, possibly because having the 1 at the top most resembled the 1 being at the top on the old rotary dial. Been that way since.

Ya need to buy decent stuff too. Dry aged is my preference. And just because Black Angus is probably the most widely marketed and supplied beef, doesn’t make it the best.
Having said that some of the better stuff I have bought lately is Angus from Coles in a vacuum pack and aged. At $57 a kilo you need to wait til it’s closer to $30 a kilo.
Bertiea butcher in richmknd has a great looking dry aging fridge, works out to about $40 a kilo…
