Went to Italia +39 today. Had the Tartufata pizza with pancetta. Sooo good.

Preparing a batch of empanadas (sort of like pasties).
2-3 onions, chopped
500 gm minced beef
olive oil
pepper, salt, paprika (I use hot but any of the 3 types will do), onion powder, garlic powder, oregano, ground cumin or can use adobo instead of the last 4 spices.
a glass of white wine
2 hard-boiled eggs, plus one for egg wash
pitted olives
puff pastry
Sweat the onions in the oil
Brown the meat
Add seasonings
Add wine and let it cook off the alcohol
Cover and refrigerate mix for a few hours or overnight
Remove from fridge
Cut the puff pastry into rounds of about 12-15cm
Spoon the mixture onto one half of the pastry
Add hard-boiled egg - having cut the eggs into 8 pieces each
Add a pitted olive
Close over the pastry, using water to wet the edge
Seal pastry using fork or crimping with fingers
Apply egg-wash to top
Use toothpicks to pierce top of pastry to allow steam out, about 6 per empanada
Bake for about 20 minutes in a pre-heated oven to 200 degrees

You can add whatever you like - sultanas, chilis whatever
You can use ingredients other than beef
You can deep fry them rather than bake them
You can use shortcrust pastry rather than puff pastry, but I prefer puff

2nd best is a grim little takeaway joint just off the Ring Rd in Epping called Miller St Souvlakis
Ignore the decor - food is grouse.
Stalactites is hugely overrated (and overpriced).
