Onions for me. And English mustard (maybe horseradish mayonnaise instead ). Like to add some bite to the pork and crackle (kind of like banh mi!).

My mum used to make a curried banana salad so silly suggestion needs to be taken seriously just in case.

Did the same with some leftover turkey which Iād done in the smoker, with some gravy Iād made with the drippings.
Didnāt have any crackle though, moreās the pityā¦
